Recipe: Spinach, Prawn, Mushroom and Chilli Pasta Sauce

I was feeling really low and lethargic today which resulted in me getting absolutely no work done :( so I concluded that I needed to cook myself something really tasty and sorta fresh for a student full of iron and protein. After a quick browse of the internet (other lifestyle bloggers) for inspiration and quickly stumbled across the absolutely gorgeous looking recipe by Shelley and it is here so go and look at it, seriously!

So I rushed to to Asda at 8pm and bought various ingredients to make my own version and have decided to share it with you because it tasted extra delicious.


Serves Two (but for one, read my comments)

Prep Time: 5 minutes
Cook Time: no more than 20 minutes

Ingredients:
  Pasta (your choice, I used Fusilli)
An Onion
Mushrooms
Tinned Tomatoes
Spinach (one portion, I bought a 
bag that serves four so used a quarter
Sweet Chilli Dipping Sauce
Prawns

Optional
Mild Chilli Powder
Nutmeg
Basil
Paprika

1) Chop your onions and mushrooms (I did use frozen mushrooms which worked really well)

2) In a saucepan heat some oil on medium heat, add the chopped onions once they have slightly browned add the mushrooms

3) Once the mushrooms have softened add the tinned tomatoes (at this point, I decided I had way too much sauce for one so froze half)

4) Once the sauce is boiling turn down the heat slightly and add the spinach, don't worry it will completely fill your saucepan but keep stirring and it will soon reduce and will look like hardly any

5) In a separate saucepan put your pasta on with a little salt and cook as per the directions on the packet

6) Add a generous tablespoon of sweet chilli dipping sauce to the tomato sauce and continue to stir

7) OPTIONAL add Mild Chilli Powder, Nutmeg, Basil and Paprika, all dried, to taste

8) Wait for the pasta to be finished then drain

9) Add the prawns and pasta to the tomato sauce and mix together whilst it is still on low heat for a couple of minutes

10) Serve and enjoy
